@phill It was nothing special dude… just cooked some onions in a big pot until they were translucent, then threw in some chicken. When those were cooked, added baby carrots and then some diced potatoes. Added some water and boiled it until the potatoes and carrots were soft. Then added a touch of soy sauce and then added s&b curry cubes a couple at a time… stopped when it got to the thickness I wanted for soup. Then I threw in some washed spinach at the end because they cook fast.
Oh, and on the side, I boiled up some frozen udon and rinsed it in cold water. Then I just sat it on the side until my curry soup was done. I only use shirakiku frozen sanuki udon because that is the best stuff I’ve ever had – http://observationdiary.com/media/blogs/blog/images/frozen-udon.jpg
